Although it was made famous in the form of champagne in France, this celebrated method had actually been invented by British cider makers at least fifty years earlier.
Our vintage, 100% organic and strictly limited, has been lovingly crafted by hand, using the very same methods as these ancient English masters. Produced with traditional cider apples (largely Kingston Black) from our own private orchard. Fermented with 100% natural yeast, then meticulously re-fermented in-bottle for a further two years - this time with champagne yeast and a 'nutmeg' of sugar to encourage just the right flourish of fizz.
